Hello, I am Issam Cherrat. I live in Morocco, and I write Saffron and Argan to explain two of the country’s best known products from the source: saffron from the slopes around Taliouine and argan oil from the southwest.
Why this site exists
Saffron is one of the most copied spices in the world, and argan oil is sold under labels that often say very little. Visitors to Morocco and cooks abroad deserve clear, honest guidance. This site explains how to recognise real products, how to buy and store them, how to cook with them, and how to visit the places where they are made.
How I work
- I visit markets, cooperatives and producers, and I describe what I have seen myself.
- I check facts against standards bodies, research papers and producers, and I say when something comes from tradition rather than research.
- I cook every recipe before I publish it, and I update guides when prices, rules or places change.
